Pumpkin Farm Streusel Muffins

  • 2 ½ cups flour
  • 2 cups sugar
  • 1 Tbs. pumpkin spices
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 2 eggs lightly beaten
  • 1 cup of solid pack pumpkin
  • ½ cup vegetable oil
  • 2 cups of peeled & finely chopped apples

Streusel topping:

  • 2 tbsp flour
  • ¼ cup sugar
  • ½ tsp cinnamon
  • 4 tsp butter

Preheat oven to 350 degrees. In a large mixing bowl, shift the dry ingredients and set aside. In a medium bowl combine the eggs, pumpkin, and oil. Add liquid ingredients to dry ingredients and stir until just moist. Stir in apples. Spoon batter into greased muffin tins until they are about 2/3 of the way full. Mix streusel toppings together and spoon over top of muffins. Bake for 35-40 minutes. Makes about 18 Muffins.
