Grandma Alice’s Famous Apple Pie

Crust Ingredients

Enough for two complete pies

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • ½ lb tenderflake lard
  • 1 egg, stirred slightly
  • ½ tablespoon vinegar
  • 1/2 cup cold water

Directions

Shift the flour and salt together. Cut in the lard with a pastry blender or two knives until the shortening is in pea size pieces. In a measuring cup, combine the egg and vinegar. Add cold water. Stir the liquid into the flour mixture, adding just enough to make the dough cling together. Stir the water in with a wooden spoon until mixed thoroughly. Then gather the dough into a ball, and separate into four portions. Cover and refrigerate for one hour. You can chill it overnite, covered, providing you leave it at room temperature for 15 minutes before rolling. Lightly flour surface and roll into circles. Then pat the dough into pie pans, following pie recipes. Be careful not to stretch the dough. This is also a good dough for tarts, but you will want to roll the dough a little thick.

Filling

  • 2 cups white sugar
  • 2 cups brown sugar
  • 2 Tbs. Corn starch
  • 2 Tbs. Flour
  • 1 tsp. Cinnamon

Directions

Peel and cut up enough Jonagold or Elstar apples to make eight cups of apples. Pour the dry ingredients together on top of the apples and mix them in. Cook in the microwave on high for 4-6 minutes. Stir well and then cook again until apples are somewhat cooked and sauce is thickened. Cool filling and place in the pie pastry shell. Add the top layer and cut a few slits in the top. Put a small amount of cream or milk in a bowl and brush the top of the pie with a pastry brush. Sprinkle crust with white sugar. Bake pie for 15 minutes at 400 degrees and then another 45 minutes at 350 degrees. When finished, the pie should be golden brown on the top and the filling should be bubbling through the slits in the top of the crust.


Pumpkin Farm Streusel Muffins

  • 2 ½ cups flour
  • 2 cups sugar
  • 1 Tbs. pumpkin spices
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 2 eggs lightly beaten
  • 1 cup of solid pack pumpkin
  • ½ cup vegetable oil
  • 2 cups of peeled & finely chopped apples

Streusel topping:

  • 2 tbsp flour
  • ¼ cup sugar
  • ½ tsp cinnamon
  • 4 tsp butter

Preheat oven to 350 degrees. In a large mixing bowl, shift the dry ingredients and set aside. In a medium bowl combine the eggs, pumpkin, and oil. Add liquid ingredients to dry ingredients and stir until just moist. Stir in apples. Spoon batter into greased muffin tins until they are about 2/3 of the way full. Mix streusel toppings together and spoon over top of muffins. Bake for 35-40 minutes. Makes about 18 Muffins.


Bavarian Apple Torte

  • ¾ cup margarine
  • ½ cup sugar
  • ½ tsp vanilla
  • 1 ½ cups flour

Mix together and place in a 9 inch spring form pan.

Filling

Place the following in a medium sized bowl and beat together.

  • 12 – 16 oz. cream cheese (2 packages)
  • ½ cup sugar
  • ¾ tsp. vanilla
  • 2 eggs

Put on top of base.

Topping

  • 4 cups Elstar or Jonagold apples chopped or sliced
  • ¾ cups sugar
  • 1 Tbs. cinnamon
  • Top with 1 cups slivered almonds

Bake at 350 degrees for 50 – 60 minutes


Mom Taves Applecake

  • 1 ½ cups sugar
  • ½ cups oil
  • ½ cup applesauce
  • 3 eggs
  • 2 cups flour
  • 1 ½ tsp. cinnamon
  • 1 tsp. baking soda
  • ½ tsp salt
  • ¼ tsp. nutmeg
  • 3 cups apples finely chopped

Directions

Mix wet ingredients together first and then add in dry ingredients. Do not overmix. Stir in apples. Line a 12 x 15 inch cookie sheet with parchment paper. Spoon batter into cookie sheet and bake for 25 – 35 minutes until brown.

Once cake is cool, ice with caramel frosting.

Caramel Frosting Recipe

  • ½ cup margarine
  • ¼ cup milk
  • 1 cup packed brown sugar
  • 2 cups icing sugar

Directions

Heat margarine until melted and stir in brown sugar. Boil for 2 minutes, stirring constantly. Add milk and use whisk to mix in. Heat until boiling. Place the bowl in a sink full of cold water and gradually beat in ice sugar until set. Once cake is cool, frost with icing.


Apple Bread with Streusel Topping

Ingredients:

  • 1 1/2 C flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 3 tsp. cinnamon
  • 1/4 tsp. ground cloves
  • 2 eggs
  • 1/4 C. oil
  • 1/4 C. applesauce
  • 1 tsp. vanilla
  • 1/2 C. sugar
  • 1/2 C. brown sugar
  • 2 C. apples, grated (remove skins first)
NOTE: You can chop up your apples if you prefer, don’t leave the chunks too large. But grating is best.

Streusel Topping:

  • 1/3 C. brown sugar
  • 1/3 C. flour
  • 1/4 C. oats
  • 3 Tbsp. butter, melted

Directions:

  1. Preheat oven to 350 degrees and grease an 8X4 loaf pan. (I lined mine with parchment.)
  2. In a large bowl, combine flour, baking soda, baking powder, salt, cinnamon and cloves. Set aside.
  3. In a stand mixer, beat eggs, oil, applesauce, vanilla, sugar and brown sugar.
  4. Slowly add in dry ingredients, careful not to over mix.
  5. Stir in grated apples.
  6. Dump into loaf pan.
  7. Streusel: Combine all ingredients and crumble over dough in pan.
  8. Bake for 45-55 minutes or until an inserted knife comes out clean.
  9. Let cool for a few minutes before removing from pan.
